Strawberry Muffins

Well, I got a few strawberries from Costco. Okay, like ten thousand. And it’s not strawberry season. But they were so cheap. But they were so bad.

So I looked up a recipe I had for strawberry muffins. I’m sure I got it off the interwebs a couple of moons ago. I will post it here for you to use with your bad fruit. YUM. Enough sugar and flour and butter can turn any fruit from bad to good in less than an hour!

Strawberry Cinnamon Muffins

Ingredients

– 2 eggs
– 2/3 cup sugar
– 1/2 cup milk
– 1/4 cup plain yogurt
– 1 teaspoon vanilla
– 1/2 stick butter, melted and cooled
– 2 cups flour
– 1 tablespoon baking powder
– 1/4 teaspoon salt
– 1/4 teaspoon cinnamon
– 1 1/2 cups strawberries, hulled and cut in chunks

Directions

Preheat oven to 375°F/200°C. Grease muffin tins or line with paper cups (if you do, grease the tops around the paper cups for overflow). Grease well.

In a large mixing bowl, whisk together eggs and sugar until light. Add milk, yogurt, vanilla, and melted butter. Gently whisk. (I heart my Kitchen Aid Mixer….sigh…)

In another bowl, combine flour, baking powder, salt, and cinnamon. Add to milk mixture and stir just until flour disappears.(if you want to know why you shouldn’t overstir, here’s everything you ever needed to know about baking bread and quickbreads.)

Gently stir in berries. *Gently. More of a “fold in berries” moment. (They look good but actually are flavorless. But not for long!)

Spoon thick batter into muffin cups to the top. I feel you should *always* add sugar to the top of muffins. When I was little my mom used to take us to this little muffin shoppe (okay, Dunkin’ Donuts) and they always had sugar crusted blueberry muffins. Yum. Here I used sugar in the raw and some cinnamon, but granulated works fine too!

Bake about 25 minutes, until tester comes out clean.

Invert and cool on rack. Or into a waiting child’s mouth. But be sure to blow on it first. They are TOTALLY awesome with a little pat of butter.

This makes about 11 muffins. I like mine full up to the top. Here’s what the kids look like when they’re wolfing down the muffins.

Yummy! Unfortunately, now I get to clean up.
