making kale edible

Happy Monday! It’s time for a recipe. In the course of getting my family to try new foods which are healthy, I got a bunch of kale this weekend and I was trying to remember how my friend Natalie made it edible. Although kale looks just gorgeous,

it is tough and weird and a little bitter. The stems are very tough and, truly, for me, kale is one of those foods that leave you thinking “how did people think this was edible in the first place??” Like, when someone looked at the bark of a tree and said “I bet that cinnamon would be delicious in applesauce.” Well, more like, no, I’m not eating twigs but here’s some tough, crunchy, gross kale. I have standards!

So here you go. This is my friend Natalie’s recipe.

Toasty Kale Chips

One bunch kale
Apple cider vinegar
Olive Oil
Salt (I like sea salt)

Preheat oven to 350 degrees. Wash kale and trim it off stems. Then trim it into small pieces, the size of chips. Put kale into gallon-sized zipper baggie. Take about 1/3 c of apple cider vinegar and pour over the kale. Add about 1/4 c olive oil and pour over kale. Toss inside the bag lightly so as not to bruise the kale, and then take out and arrange on a baking sheet. (SPRAY THE SHEET thoroughly first or I use a silpat mat, they are awesome and nothing sticks to them.) Sprinkle with sea salt, then bake them about 10 minutes (take them out once or twice to rearrange on the baking sheet so the softer parts dry out). Make sure they’re all dry as possible, because they’re really much better as chips than as mush.

Voila! Now you have something edible, delicate, and, I daresay, even delicious? Maybe. You be the judge!

I made them once and added to much salt and did not add the cider vinegar…maybe I’ll try again and they will turn out better.

haha. I have to laugh at this because last week my girlfriend gave these a whirl and they came out black. Not what we were going for, but they still had a smidge of decency. Can’t wait to try them the ‘real’ way. :)

You REALLY have to watch them! Too much and they are …um, disgusting. There is no other word :)
